The Principle of DENBA+ in Sub-zero Environments

DENBA+ uses proprietary technology to create an electric field inside the refrigerator. The effect of fine electronic vibration creates a chilled environment in which water molecules do not solidify, or freeze, even in the sub-zero range of 0°C to -4°C. It helps prevent oxidation of ingredients and provides a bacteriostatic effect. Through this technology, DENBA+ creates an environment that supports both freshness and aging.

Temperature Comparison During DENBA+ Freezing

It does not freeze until around -4°C, and once freezing begins, it freezes faster than normal freezing. By applying DENBA technology to ingredients while freezing, it is possible to freeze them while maintaining freshness and helping preserve cell structure.

Abalone frozen with DENBA retained its texture and firm bite after thawing, almost like fresh abalone. The liver also held its shape better with DENBA freezing, while off-odors were reduced.
Since starting to sell DENBA-frozen products, more customers have come to prefer frozen items. Live-processed abalone is frozen with DENBA and sold at the same price as fresh products.
